The riffs below are flavor ideas built from that one mix: seasonal, flexible, and meant to be played with. Pick the one that sounds good, use the notes, and make it yours.
Welcome to summer. Spice doesn't take the summer off. It waits for the figs, sticky and barely ripe, then brings the honey and toasted walnuts.
Fig + Walnut + Honey
Diced fresh figs, toasted walnuts. Honey across the tops once they're out of the oven.
Roasted Pear + Maple
Roast the pears first, the caramelization is the whole point.
Fold in a cup of roasted diced pear and cut the milk by two tablespoons. Maple glaze brushed on warm.
Apple + Brown Butter
Diced, never grated, the texture matters.
Brown the butter and use it for the oil. Fold in a cup of diced apple and cut the milk by two tablespoons.
Oat Crumble + Flaky Salt
Rubbed together by hand, piled high.
Oats, butter, brown sugar, and a pinch of salt over the top before baking. Some will fall, that's fine. No other changes.
Apple + Cheddar
Sweet and savory, the way good pie wants a sharp bite.
Fold in a cup of diced apple and a half cup of grated sharp cheddar. Cut the milk by two tablespoons.
Cranberry + Orange
Tart and bright against all that spice.
Orange zest in the sugar, a cup of cranberries folded last. Add the juice and cut the milk by two tablespoons.
Crystallized Ginger + Pepitas
Sweet heat and a little crunch.
A quarter cup of finely chopped crystallized ginger in the dry mix. Toasted pepitas on top. No other changes.
Pumpkin + Black Pepper
A few cracks of pepper are what make it grown-up.
A quarter cup of pumpkin purée in the wet mix, cut the milk by a quarter cup. Fresh pepper to finish.
Sweet Potato + Pecan
Thanksgiving in a muffin, minus the marshmallows.
A quarter cup of mashed roasted sweet potato in the wet, cut the milk by three tablespoons. Pecans pressed on top.
Chai + Honey
Every warm spice at once, plus a drizzle.
A tablespoon of chai spice in the dry mix. Honey across the tops, warm from the oven. No other changes.
Date + Walnut
Sticky, toffee-deep, a little old-world.
A half cup of chopped dates in the dry mix, toasted walnuts folded in. No other changes.
